Ingredients
- 400g Beef bacon
- 1 cup plain flour
- 3 large eggs
- 3 tbs butter
- 2 tbs fresh chives, chopped
- ¼ cup cheese, grated
- 300 ml full cream milk
- 2 tsp olive oil
- Salt Pickled red onions, for serving (optional)
Method
Preheat the oven to 220c. In a large bowl, whisk together the eggs, salt and flour until combined.
Gradually add the milk while whisking continuously to create a smooth batter. Stir in the cheese and chives.
Heat an ovenproof frying pan over medium heat and melt the butter. Pour in the batter and transfer the pan to to oven.
Bake for 20-25 minutes until the pancake is puffy and golden brown. It will collapse slightly once removed from the oven.
While the pancake bakes, heat olive oil in a pan and fry the beef bacon for a few minutes on each side until crispy.
Serve the pancake warm with crispy beef bacon and pickled red onions for freshness.
