Ingredients
- 1 600g Porterhouse sirloin steak
- 1 tbs Tallow ( see blog on how to turn beef fat into tallow)
- Salt and pepper
Method
Remove the steak from the fridge for a minimum of 30 minutes. Pat dry with a paper towel and season generously with salt.
Heat a pan for 5 minutes or until very hot. Add the tallow and sear the steak on all sides for a few minutes. Reduce the heat to medium and cook for 15 minutes turning regularly for medium rare or until you reach 52c. The steak will continue to cook while resting.
Loosely cover the steak with foil and let rest for 10 minutes. Season with pepper.
