Ingredients
- 200g traditional sliced bacon
- 100g red onion, chopped
- 2 c broccoli, chopped
- ¼ c cream
- 1 c cheddar cheese, grated
- 1 tsp paprika
- 10 eggs
- 1 tbs olive oil
- 50g marinated feta, sliced or crumbled
- 1 tomato, sliced
- 1 tbs fresh parsley
- 1 tbs fresh thyme
- Salt & Pepper
Directions
- Preheat your oven to 200c. In a large bowl whisk the eggs.
- Add the cheese, cream, salt, pepper, paprika and whisk until combined. Set aside.
- Heat the olive oil in an oven-proof frying pan over medium heat. Cook the bacon and onions for 5 minutes until lightly browned, then add the broccoli and cook for an additional 5 minutes.
- Adjust heat to medium/low and add egg mixture. Quickly stir to distribute bacon and vegetables evenly. Cook for 5 minutes.
- Top the frittata with tomatoes and feta, then bake for 25/30 minutes or until set. Garnish with parsley, thyme and a pinch of salt and pepper.
