Bacon and Broccoli Frittata

Ingredients

  • 200g traditional sliced bacon
  • 100g red onion, chopped
  • 2 c broccoli, chopped
  • ¼ c cream
  • 1 c cheddar cheese, grated
  • 1 tsp paprika
  • 10 eggs
  • 1 tbs olive oil
  • 50g marinated feta, sliced or crumbled
  • 1 tomato, sliced
  • 1 tbs fresh parsley
  • 1 tbs fresh thyme
  • Salt & Pepper

    Directions

    1. Preheat your oven to 200c. In a large bowl whisk the eggs.
    2. Add the cheese, cream, salt, pepper, paprika and whisk until combined. Set aside.
    3. Heat the olive oil in an oven-proof frying pan over medium heat. Cook the bacon and onions for 5 minutes until lightly browned, then add the broccoli and cook for an additional 5 minutes.
    4. Adjust heat to medium/low and add egg mixture. Quickly stir to distribute bacon and vegetables evenly. Cook for 5 minutes.
    5. Top the frittata with tomatoes and feta, then bake for 25/30 minutes or until set. Garnish with parsley, thyme and a pinch of salt and pepper.
