Sweet and spicy chicken wings

Ingredients

Chicken

  • 1 kg Chicken wings

Marinade

  • ½ c sweet chilli sauce
  • 3 tbs brown sugar
  • 5 tbs soy sauce
  • 3 tbs rice wine vinegar
  • 2 tbs fish sauce
  • 1 tsp ginger powder
  • 1 tb lemongrass paste
  • 2 garlic cloves, minced
  • 1 tsp sesame oil
  • 1 tbs butter, melted

Garnish

  • 2 tsp sesame seeds
  • 2 spring onions, sliced – green part only

      Directions

      1. Chicken wings can be prepared either whole or cut.
      2. Preheat your oven to 210c. Pat dry the chicken wings and season with salt. Spray a baking tray with a little olive oil and place the chicken on the tray.
      3. Combine all ingredients for the marinade in a bowl. Toss the wings in half of the prepared marinade and place the remainder in a small saucepan. Arrange the wings in a single layer and bake for 15 minutes.
      4. Heat the remaining marinade to a gentle simmer for approximately 5 minutes or until it thickens slightly.
      5. Flip the wings and continue cooking for another 10 minutes. Adjust the oven temperature to its highest, baste the wings with some of the glaze , and return to the oven for 5 minutes.
      6. When the wings are golden brown, remove them from the oven and coat them with the glaze for a second time. Then, sprinkle the wings with spring onions and sesame seeds. Use any leftover glaze for dipping.
