Pork Spare Ribs With Loaded Corn

Ingredients

Dry rub:

  • 3 tsp brown sugar
  • 3 tsp salt
  • 3 tsp garlic powder
  • 3 tsp onion powder
  • 1 tsp pepper
  • 3 tsp paprika
  • 2 tsp chilli flakes

 

  • 1200g Pork spare ribs
  • 3 corn on the cob
  • 2 tbs mayonnaise
  • 2 tbs sour cream
  • juice of ½ lime
  • 2 tsp chives
  • sprinkle of chilli flakes
  • 3 tbs crumbled feta
  • ½ c bbq sauce
  • Salt and pepper

        Method

        Preheat your oven to 150c. Line a baking tray with foil ,and top with a sheet of baking paper. Make the dry rub by combining all ingredients. Pat dry the pork, place on the tray and rub all sides with the dry rub. Cover tightly with foil and bake for 2.5 hrs.

        After 2 hours remove from the oven, increase the oven to 200c . Brush the ribs with BBQ sauce ( leaving some for later ) and place back into the oven. Cook for a further 20 minutes. Brush the ribs with the reserved BBQ sauce.

        In the meantime, boil the corn for 10 minutes. Make a dressing by combining the mayonnaise, sour cream, lime juice and salt and pepper.

        Drizzle the sauce over the corn and sprinkle with the feta, salt flakes , chives and some chilli flakes.
