Ingredients
- 2 pork and parsley sausages
- 3 eggs, whisked
- 3 cherry tomatoes, quartered
- 1 tbs thickened cream
- 2 tbs butter
- 1 tsp fresh parsley, chopped
- 1 tbs olive oil
- Salt and pepper
Method
Cook the sausages in the olive oil for about 15 minutes or until cooked.
In the meantime, whisk the eggs and cream in a bowl and season with a pinch of salt. Once the sausages are cooked, remove them from the pan. Wipe the pan clean and add the butter to the pan. Scramble the eggs on low heat until just set.
Plate the scrambled eggs and top with sliced sausages. Garnish with parsley, cherry tomatoes, and salt and pepper.
