Marrow herb butter

Ingredients

  • 1 beef marrow bone
  • 150g salted butter
  • ½ tsp olive oil
  • 1 tsp chilli flakes
  • 2 tsp fresh chives, finely chopped
  • 1 tsp fresh thyme
  • 3 tbs fresh parsley, finely chopped
  • Zest of 1 lemon
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • Salt & pepper

Directions

  1. Preheat the oven to 230c. Wash the bone and pat dry. Season with salt and pepper and place on a lined baking tray.
  2. Bake for 20 minutes. Remove from the oven and cool slightly.
  3. In the meantime place the butter in a bowl and softened the butter by placing it in the microwave for a few seconds. ( not melted )
  4. Add all the ingredients, spoon out the marrow and add to the butter. Season with salt and pepper and combine. The addition of the chilli is to enhance the flavour and is very mild. Omit if you don’t like chillies.
  5. Cut off some glad wrap and place the butter on the edge . Fold over until completely rolled up. Twist the ends until tight and a log is formed.
  6. Place in the fridge to cool and set.
