Chicken Satay with peanut sauce (normal recipe)

Ingredients

Chicken:

  • 2 chicken breasts (500g) cut into cubes
  • 1 tbs soy sauce
  • 1 tbs kecap manis
  • ¼ tsp cumin
  • ¼ tsp ground ginger

        Peanut sauce:

        • 6 heaped tbs peanut butter
        • 1tbs kecap manis
        • ¼ c sweet chilli sauce
        • 1 tsp chilli flakes ( or to taste)
        • 2 tbs coconut milk
        • ½ cup water ( plus extra, if needed)
        • Handful of peanuts, crushed
        • Handful of fresh coriander, chopped
        • Juice of ½ lime

        Method

        Marinate the chicken:

        In a bowl, season the chicken cubes with salt and pepper, soy sauce, kecap manis, cumin, and ginger. Let marinate for a minimum of 30 minutes.
        Soak 6 skewers in water while the chicken marinates. Once marinated, thread the chicken cubes onto the skewers.

        Make the peanut sauce:

        Combine peanut butter, kecap manis, sweet chilli sauce, chilli flakes, coconut milk, and water in a small saucepan. Heat on low, stirring constantly, until the sauce thickens. Stir in lime juice and set aside.

        Cook the chicken:

        Heat a griddle pan or BBQ over medium high heat. Cook the chicken skewers for 15 minutes, or until fully cooked, turning occasionally.

        Plate and serve:

        Reheat the sauce gently if needed, adding a splash of water to adjust consistency. Serve the chicken skewers with the peanut sauce on the side, garnished with crushed peanuts and fresh coriander.
