Beef sausages with cauliflower mash

Ingredients

  • 600g cauliflower - small florets
  • 4 beef sausages, 320g
  • 100g bacon, diced
  • 2 spring onions, light green part finely diced, green part sliced
  • 2 garlic cloves, minced
  • 2 tbs cream
  • 1 tsp ghee
  • 2 tsp tallow (see blog on how to turn pure beef fat into tallow )
  • 2 tsp mustard
  • 1 tbs butter
  • 2 tsp parmesan cheese , grated
  • Pinch of chilli flakes

Directions

  1. Prepare the cauliflower by trimming the stems and cutting into small florets . Steam for 25 minutes.
  2. Heat 2 tsp tallow into a frying pan and cook the sausages on low/ medium heat for about 20 minutes or until cooked.
  3. In the meantime cook the bacon to your liking in 1 tsp of ghee, add the finely diced spring onions, cook for a few minutes and add the garlic. Cook for a further minute and remove from the pan.
  4. Place the cauliflower in a food processor with the mustard, cream and salt. Blitz until smooth.
  5. Plate the cauliflower and top with the bacon mixture and sliced green onions. Garnish with a sprinkle of red chilli flakes and parmesan cheese.
