Ingredients
- 600g cauliflower - small florets
- 4 beef sausages, 320g
- 100g bacon, diced
- 2 spring onions, light green part finely diced, green part sliced
- 2 garlic cloves, minced
- 2 tbs cream
- 1 tsp ghee
- 2 tsp tallow (see blog on how to turn pure beef fat into tallow )
- 2 tsp mustard
- 1 tbs butter
- 2 tsp parmesan cheese , grated
- Pinch of chilli flakes
Directions
- Prepare the cauliflower by trimming the stems and cutting into small florets . Steam for 25 minutes.
- Heat 2 tsp tallow into a frying pan and cook the sausages on low/ medium heat for about 20 minutes or until cooked.
- In the meantime cook the bacon to your liking in 1 tsp of ghee, add the finely diced spring onions, cook for a few minutes and add the garlic. Cook for a further minute and remove from the pan.
- Place the cauliflower in a food processor with the mustard, cream and salt. Blitz until smooth.
- Plate the cauliflower and top with the bacon mixture and sliced green onions. Garnish with a sprinkle of red chilli flakes and parmesan cheese.
