Beef meat pies

Beef meat pies

Ingredients

  • 1 kg diced beef chuck steak
  • 1 red onion, diced
  • 3 garlic cloves, minced
  • 750 ml beef stock
  • 200 ml red wine
  • 3 tbs plain flour
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 clove
  • 1 tsp worcestershire sauce
  • 2 tbs tomato paste
  • 3 tsp beef tallow
  • 5 sheets of puff pastry
  • 1 egg, whisked
  • salt & pepper

Directions

  1. Season the beef with salt & pepper. Heat 2 tsp of beef tallow in a large frying pan over high heat. Cook the beef in batches ensuring you get a nice sear on the meat and remove from the pan. Repeat with remaining beef, adding more tallow if needed.
  2. Lower the heat and cook the onion for a few minutes .Add the garlic, and cook for a further minute.
  3. Add the flour and combine. Slowly incorporate the stock to the beef, stirring constantly until flour is dissolved. Add the wine, tomato paste, worchesthire sauce, bay leaves, clove and season with salt & pepper.
  4. Return the beef including juices and bring to a simmer. Cover the pan with a lid and simmer for 2 hrs on low heat. Stirring occasionally.
  5. Remove the lid, increase the heat slightly and simmer for a further 30 minutes or until the sauce has reduced to a thick gravy. Consistency. Remove from the heat and let cool to room temperature or refrigerate overnight.
  6. Preheat the oven to 200c fan forced.
  7. Make 10 pastry circles. I used a bowl that allowed me to get 2 circles out of the 1 sheet. Place a bowl on the pastry and with a knife cut away the remaining pastry.
  8. Fill half of the pastry with the meat filling leaving a border. Gently pull the other half over the meat, align and gently push the edges down with your fingers.
  9. Use the end part of a fork to seal the dough together by lightly pressing the edges of the pastry. Brush the pies with egg wash and snip a little opening in the pies. I used small scissors. Place on a baking paper lined tray and bake for 25-30 minutes or until golden brown.
